Skinny Greek Layer Dip

Creamy, zesty and full of flavor! A perfect appetizer for entertaining or to enjoy in single servings for yourself.

 

Totally customizable to your taste buds. Add or subtract as you please.

INGREDIENTS

  • 1/3 cup no-fat plain Greek yogurt

  • 1/3 cup reduced-fat cream cheese

    *dairy alternative: use Kite Hill cream cheese

  • 1/2-1 Tbsp of minced garlic

  • 1/2 lemon

  • 1/2-3/4 cup of hummus (spicy, red pepper, garlic)

  • 1/2 English cucumber

  • 1 cup cherry tomatoes

  • Kalamata olives

  • 1/2 cup Feta cheese

  • Light greek dressing OR mix olive oil, balsamic, salt and pepper

  • Spices: oregano, garlic powder, fresh basil, fresh parsley, salt and pepper

  • instructions

  1. Whip together Greek yogurt, cream cheese and minced garlic.

  2. Squeeze in lemon juice and stir.

  3. Spread on bottom of dish as your first layer.

  4. Then lightly spread the hummus on top.

  5. Chop cucumbers into thin quarters and toss with some oregano and a little dressing.

  6. Quarter tomatoes and toss with garlic powder, salt and pepper.

  7. Then spread your veggies on top of the hummus layer.

  8. Half the olives to line the outer edge of your dish and sprinkle a few all over.

  9. Chop fresh herbs and sprinkle all over. *I like to use about 1/8 of a cup of each basil and parsley.

  10. Sprinkle on the feta cheese and finish with a light drizzle of Greek dressing on top.

    *Enjoy with warm pita bread or your favorite bag of crunchy pita chips.
