Chicken Sausage One Sheet Wonder

This savory dish filled with high fiber veggies and an easy add on protein can be enjoyed as is or over rice.

 

Cook everything on one sheet? Yes please!

INGREDIENTS

  • 1 bag Brussels sprouts

  • 2 zucchini

  • Cubed butternut squash

  • Olive oil

  • 1 pack of chicken sausage (choose your flavor of liking)

  • 1 Fuji apple

  • 1 red bell pepper

  • 1/2 onion

  • Spices: garlic powder, oregano, salt and pepper, fresh thyme

    instructions

  1. Preheat oven to 375°F.

  2. Line a baking sheet with foil.

  3. Chop Brussel sprouts, zucchini and butternut squash. Add to a bowl, lightly drizzle with olive oil and toss to coat. Then sprinkle on dried spices and toss to fully cover.

  4. Chop sausage, apple, pepper and onion and set aside in another bowl.

  5. Cover your baking sheet with the Brussels sprout veggie mix and add a bunch of fresh thyme sprigs.

  6. Bake for 8-10 minutes.

  7. Remove and add the sausage mix. Lightly spray olive oil over the top.

  8. Bake for an additional 7-8 minutes or until fully cooked to your liking.

  9. Remove and serve.

    *Serve over steamed rice or steamed cauliflower rice, depending on your nutritional needs.

    *The root veggies are cooked first because they take longer to bake.

    *Bilinski chicken sausage is my favorite!

    *Vegan option: sub extra firm tofu tossed in olive oil and the spices listed above.
