Hearts of Palm Feta Melt
This warm and cheesy comfort dish is so rich in flavor, you will not miss the pasta!
Hearts of palm replace pasta for a low-calorie, low-carb and high-fiber dish!
INGREDIENTS
1 pint of whole cherry tomatoes
1 carton Portobello mushrooms sliced
1 block of Feta
Italian herbs of choice
Garlic powder
Salt and pepper
Olive oil
1-2 sprigs of rosemary
2 cans or bags of hearts of palm noodles
instructions
Preheat oven to 400°F.
Place your tomatoes and sliced mushrooms in an 8x8 or 8x10 baker.
Nestle the block of feta in the middle of the tomatoes and mushrooms.
Sprinkle a mix of dried Italian herbs (basil, oregano, parsley, thyme), garlic powder, and salt and pepper over everything.
Drizzle olive oil over everything and place the rosemary on top of the feta.
Bake for 40 minutes.
Remove from oven and immediately gently press down on the feta until it gets nice and gooey. Smother your tomatoes and mushrooms with the feta until covered.
Add your drained hearts of palm noodles and mix well.
*Serves 6-8.
*Chicken sausage or pre-cooked chicken make for great add-ons.
*Make this a dip by eliminating the noodles.
