Crustless Egg Cups

A completely customizable mini egg quiche! Perfect for a midday snack or breakfast on the go!

 

Combine eggs with your favorite veggies, cheese and herbs. Bake and enjoy!

INGREDIENTS

  • 4 whole eggs

  • 4 egg whites

Limitless list:

    • Peppers, onions, jalapeños, tomatoes, broccoli, spinach, kale, cauliflower rice, etc.

    • Spices

Choose 2 from this list:

    • Cooked ground beef or turkey

    • Turkey bacon or lean bacon

    • Chicken sausage

    • Goat Cheese

    • Feta

    • Mozzarella

      instructions

  1. Preheat oven to 375°F.

  2. Spray 12-cup muffin tin with olive oil.

  3. Beat whole eggs and egg whites, spices (ex. garlic, salt, pepper) and a splash of water together in a large bowl.

  4. Chop up veggies and prep meat of choice (chop or crumble) and add to muffin tins. Be sure to not go past 1/2 full.

  5. Then add egg mix and fill almost to the top. Carefully stir the mixture in each tin.

  6. Bake 15 minutes or until eggs are fully cooked.

  7. Remove and let cool. Serve immediately or keep in fridge for a week.

    *2 per serving.

    *Enjoy with a serving of fruit for a meal.
