Oatmeal Bake

Talk about an easy no excuse breakfast or the perfect post workout snack that provides both protein and carbohydrates.

Best part, tastes AMAZING!

 

A sweet and creamy treat that tastes just like ice cream!

INGREDIENTS

  • 3 cups old-fashioned oats

  • 4-5 packets stevia or ¼ cup sugar (I used coconut sugar)

  • 2 tsp. cinnamon

  • 2 tsp. baking powder

  • 1/4 tsp. salt

  • 1 1/2 cups unsweetened vanilla almond milk

  • 1/2 cup unsweetened applesauce

  • 1/2 cup (about 4 large) egg whites

  • 2 tsp. vanilla extract

instructions

  1. Preheat oven to 350 degrees. Spray an 8″ X 8″ baking pan with nonstick spray.

  2. In a large bowl, combine oats, sweetener, cinnamon, baking powder, and salt. Mix well.

  3. In a medium-large bowl, combine almond milk, applesauce, egg, and vanilla extract. Mix well.

  4. Add mixture in the medium-large bowl to the large bowl. Stir until uniform.

  5. Transfer the mixture to the baking pan, and smooth out the surface.

  6. Bake until top is light golden brown and entire dish is cooked through, about 35 minutes.


    MAKES 6-8 SERVINGS

Some Fun Varieties

  • Add 1/4 cup powdered peanut butter to the dry ingredients. Add 1 1/2 tbsp. creamy peanut butter to the wet ingredients. Once batter is mixed, gently fold in 3/4 cup chopped freeze-dried strawberries. Before baking, top with 1/4 cup chopped freeze-dried strawberries, and lightly press to stick.

  • Replace vanilla extract with almond extract.  Once batter is mixed, fold in 1/4 cup roughly chopped unsweetened shredded coconut and 1 1/2 tbsp. mini semi-sweet chocolate chips. Before baking, top with 1/2 oz. (about 2 tbsp.) sliced almonds, and 1 1/2 tbsp. mini semi-sweet chocolate chips. Lightly press to stick.
