Beet Salad Skewers

You traditional beet salad just became the cutest healthy appetizer for your next party or event.

 

INGREDIENTS

1 pack of pre peeled beets (80z)

1 bag or container of organic arugula
1 small goat cheese log

1 small bag of walnuts dry oregano

Dressing:
2 oz of fresh OJ
2 oz balsamic vinegar

1 tsp olive oil

instructions

1. Place 15-20 skewers on a platter ready to thread
2.Slice beets into small cubes and chop goat cheese into small chunks

3. Gently skew the beet, a few pieces of arugula, walnut, cheese and beet. Keep repeating until desired amount.
4. Line skewers on dish.

5. Whisk dressing ingredietns together and drizzle over skewers when you are ready to serve. Sprinkle dried oregano last.

NOTES

The amount of ingredients you need depends on how many skewers you need and how long the skewer you will be using.
I used 3" party skewers
Be sure to be gentle with the cheese as it can crumble easily.

You can make these a day ahead, just be sure you cover.
