Air fryer Banana Cookie

What do you do with one really ripe banana? Make this gluten free, dairy free gooey warm cookie that makes 2 servings.

 

This quick “cookie” is great for a breakfast on the go with an egg or 2, or a great light pre workout snack. Or both! A quick snack on the go.

INGREDIENTS

3/4 cup quick oats or 3/4 cup of oat flour
1 medium ripe banana

1/4 cup almond milk

1-1.5 tbsp maple syrup

2 tsp cinnamon
1 tsp vanilla extract

1/4 cup chocolate chips

instructions

Preheat Airfryer 350’ while mixing your ingredients. 2.Mix all of your ingredients

until a smooth consistency. 3.Line your Airfryer baking

rack with parchment paper or foil and lightly spray with olive oil.

4.Form 2 cookies and place them on rack.

5.Bake 5-7 minutes 350’. The outside should be crisp with a soft inside

NOTES:

2-3 servings
Great topped with your favorite nut butter of choice

If you like more of a chunky texture cookie use oats

If you prefer more smooth use oat flour or blend oats
