Whole Chicken Crockpot

All you need are 10 minutes of prep time to make your own rotisserie-style chicken in the crockpot. Less sodium and fresher taste!

 

INGREDIENTS

For the Chicken
1 Whole organic chicken 4-5lbs 2 sprigs of fresh rosemary
2-3 springs fresh thyme
1 lemon sliced


Seasoning:

1 tablespoon brown sugar
1 tablespoon ground paprika

1 teaspoon salt

1 teaspoon celery salt
1 teaspoon dried thyme
1 teaspoon garlic powder

1⁄2 teaspoon onion powder
3 tablespoons butter softened

instructions

1. Spray crockpot with olive
2. Mix all seasoning ingredients together until a paste forms.
3.Rub the seasoning paste all over the chicken, inside the cavity and underneath the skin (you may need to gently release it with your index finger) – it's important to season underneath the skin even if it's a little fickle, or it will dry out and taste bland. Stuff the chicken's cavity with the cut lemon, fresh rosemary and thyme.
4. Place the chicken in the crockpot, cover and cook on high 3-4 hours. Cooked temp ‘165

NOTES

NOTES:
You will need a 6-7 qt crockpot

(I use this size for everything) For a crisp finish once your chicken is cooked, transfer it to a large baking dish and broil on high in your oven 5-7 minutes. Fantastic for leftovers too!
