Spring Roll Palmini Salad
Everything you would use in a spring roll, but now as a low carb, more veggie and fiber salad. The mix of ginger, cilantro, rice wine vinegar will want you making this zingy salad a few times of month. Enjoy and be sure to read the notes section for all options
INGREDIENTS
Ginger Dressing
3 tablespoons minced fresh ginger *see notes 2 garlic cloves minced 2 tablespoons of agave or maple syrup
1 tablespoon agave nectar or maple syrup 1/4 cup rice vinegar or white balsamic
1 tablespoon sesame
1 tablespoon olive oil
1 tsp of red pepper flakes *optional
Salt and pepper
Spring Roll Salad
1 pack of Palmini linguine or angle hair
1 cup shredded green or purple cabbage
1 small cucumber cut into quarters
2 carrots thinly sliced 1/4 cup firmly-packed minced cilantro
1/4 cup firmly-packed minced mint
1/4 cup of peanuts or more if you desire
instructions
1. Rinse and Drain Palmini noodles. Lay them spread out on a towel to dry up some moisture
2.Whisk all dressing ingredients together and set aside.
3. Chopp all of your salad veggies and herbs and place them in a big mixing bowl EXCEPT the peanuts. Add them last.
Add Palmini noodles and dressing to the bowl and mix up everything until coated.
