Cauliflower "Fried Rice"

 

Cauliflower "Fried Rice" or Hearts of Palm "Fried Rice"

A fantastic way to add extra veggies as a side dish to sautéed shrimp or salmon.

Great for a low carb style meal!

INGREDIENTS

  • 1 1/2 Tbsp sesame oil

  • 1 cup chopped onion, peas, carrots, celery

  • 1 Tbsp minced garlic

  • 1 egg

  • 1 egg white

  • 2 cups cauliflower rice or hearts of palm rice

  • 2-3 Tbsp low sodium soy sauce

instructions

  1. Heat a large sauté pan on medium heat.

  2. Add about 1 Tbsp sesame oil and let simmer for a minute.

  3. Then add chopped onions, peas, carrots and minced garlic. Cook until tender, about 5-7 minutes.

  4. Now push the veggies along the edges of the pan to create an open circle in the middle.

  5. Pour a little sesame oil in the middle and crack eggs (1 whole, 1 white) in the middle of the veggies. Let eggs cook a minute.

  6. Mix the veggies back in, add the cauliflower or hearts of palm rice and soy sauce. Keep mixing and chopping up eggs to distribute evenly.

  7. Continue mixing until it reaches the consistency of fried rice. Put lid on pan and let cook and steam for 5 min.

  8. Mix again and enjoy!

    *Makes 3-4 servings.

    *You can find bags of cauliflower already chopped up like rice at most grocery stores.
