Strawberry Cheesecake Frozen Bark

 

A little sweet, a little tangy. The perfect refreshing snack for a hot summer day.

INGREDIENTS

  • 1 cup of 2 % Plain Greek yogurt

  • 1/2 cup of strawberry flavored yogurt (I used my favorite: Icelandic creamy greek yogurt)

  • 1/2 cup of light cream cheese

  • 1/3 cup honey

  • 1-2 Tbsp vanilla extract

  • Strawberry jam (I used Crofter's)

  • Coconut Craize crackers or graham crackers

  • Fresh strawberries

instructions

  1. Line a baking sheet with parchment paper and set aside.

  2. In a medium sized bowl, combine yogurts, cream cheese, vanilla extract and honey. Mix thoroughly until combined.

  3. Carefully transfer the yogurt mixture onto the prepared baking sheet. Spread and smooth out with a spatula until it reaches an even thickness.

  4. Add dollops of strawberry jam on top and swirl it around with a toothpick.

  5. Top with sliced strawberries and crushed coconut Craize or graham cracker crumbs and lightly press them into the yogurt mixture.

  6. Freeze for 3-4 hours or until firm. (I typically leave it overnight.)

  7. Once firm, break the bark into pieces and store in a container in the freezer.



*Vegan: Use non dairy yogurt and cream cheese. (Kitehill is my go to favorite.)

*Gluten free: Use Coconut Craize crackers or gluten free graham crackers. (Craize crackers can be found at Whole Foods, Gocraize.com or Amazon.)

*Option: Add a handful of white chocolate chips before freezing.
