Strawberry Cheesecake Frozen Bark
A little sweet, a little tangy. The perfect refreshing snack for a hot summer day.
INGREDIENTS
1 cup of 2 % Plain Greek yogurt
1/2 cup of strawberry flavored yogurt (I used my favorite: Icelandic creamy greek yogurt)
1/2 cup of light cream cheese
1/3 cup honey
1-2 Tbsp vanilla extract
Strawberry jam (I used Crofter's)
Coconut Craize crackers or graham crackers
Fresh strawberries

Line a baking sheet with parchment paper and set aside.
In a medium sized bowl, combine yogurts, cream cheese, vanilla extract and honey. Mix thoroughly until combined.
Carefully transfer the yogurt mixture onto the prepared baking sheet. Spread and smooth out with a spatula until it reaches an even thickness.
Add dollops of strawberry jam on top and swirl it around with a toothpick.
Top with sliced strawberries and crushed coconut Craize or graham cracker crumbs and lightly press them into the yogurt mixture.
Freeze for 3-4 hours or until firm. (I typically leave it overnight.)
Once firm, break the bark into pieces and store in a container in the freezer.
*Vegan: Use non dairy yogurt and cream cheese. (Kitehill is my go to favorite.)
*Gluten free: Use Coconut Craize crackers or gluten free graham crackers. (Craize crackers can be found at Whole Foods, Gocraize.com or Amazon.)
*Option: Add a handful of white chocolate chips before freezing.
