Creamy Coconut Palmini Chicken

A creamy, high protein low carb option dish that is slightly sweet with a bit of tang all easily created in one dish.

 

INGREDIENTS

1 can of lite coconut milk

1 bag of palmini rice or 1 cup of cooked rice

1 lbs of skinless chicken breast

2 tablespoons of avocado

1-2 minced garlic cloves

1 lime

1/3 cup chopped cilantro

1/4 cup unsweetened coconut flakes

s&p, onion powder to taste

Instructions

Gently pound your chicken breast and cut in half

Sprinkle with s&p

Pour avocado oil into a medium heat pan and add minced garlic. Saute for 3-4 minutes

Add chicken and brown each side for 4-5 minutes then turn your heat to low

Add lite coconut milk, chopped cilantro and squeeze 1/2 lime and simmer for 5-6 minutes

Add palmini rice or cooked rice and simmer for 5 more minutes

Check chicken with a thermometer to read 150

Remove and let set for another 5 minutes and serve

NOTES

-Low Carb use Palmini rice or cauliflower rice *You can find Palmini rice online

-Regular Carb use rice. I used cilantro coconut flavored pre cooked rice

-Or you can use both for a high fiber regular carb dish
