Alfredo Palmini

 

Full of fiber AND full of flavor!

INGREDIENTS

  • 1 jar of Primal Kitchen Alfredo Sauce

  • 1 can of Palmini noodles

  • 20-25 med shrimp (frozen or fresh)

    Extras:

    • Olive oil

    • Italian spice blend

    • Zest of a lemon


instructions

  1. For frozen shrimp, start defrosting them in a bowl of water. Keep draining and replacing the cold water until the shrimp are defrosted, about 5-6 minutes for each new bowl. Then place them on a few paper towels to dry and remove excess water. (*Always dry shrimp before sautéing to prevent them from becoming mushy when cooking.)

  2. Drain your can of Palmini noodles in a strainer and shake a few times to remove excess water.

  3. Turn 2 medium pans on medium heat.

  4. Spray the bottom of one pan, add noodles, and sprinkle with an Italian spice blend.

  5. In the other pan, drizzle 1 Tbsp of olive oil and add shrimp one at a time. Sprinkle a light layer of garlic powder, salt and pepper on top.

  6. Toss your noodles a few times with tongs until warm, about 5-7 minutes, then turn off the heat. (*If you cook them for too long, they will become mushy.)

  7. Turn over each shrimp with tongs after 3-4 minutes, or until light pink.

  8. Next add 1/2 the jar of Alfredo sauce to the shrimp and slowly stir, about 5-6 minutes. Turn off heat.

  9. Add noodles to shrimp pan and coat in sauce (*for a kick of flavor, add a little zest of lemon).

  10. Add desired salt and pepper, serve hot and enjoy!



Notes: *There are several brands of Palmini noodles. I like Palmini Angel hair style best, it is firm like real pasta. (You can buy them on Amazon or at most grocery stores.)


*The best frozen shrimp are pink Argentinian shrimp from Trader Joes.


*You can order Primal Kitchen’s Alfredo sauce or purchase at most grocery stores. It’s made with cashew butter and has hints of garlic and lemon.
